SPARTANBURG, S.C. – Eggs Up Grill, a rapidly growing breakfast, brunch and lunch concept, is moving into the state of Mississippi in 2023. Former Captain D’s Area Manager Richard Harris, along with his investor partners Bill and Larry Johnson, inked a deal to bring the brand to Meridian, Miss. with a target opening date of this summer. Eggs Up Grill signed record development commitments last year, with more than 60 new locations, including its largest ever development agreement for 30 restaurants in Dallas-Fort Worth, Texas and its second largest agreements for 10 restaurants in Nashville, Tenn. and another 10 restaurants near Raleigh, NC, bringing a region-wide presence of 160 Eggs Up Grills open, under development or committed to open by local franchise partners.
“It’s always exciting to enter into a new state, as time after time, new guests become familiar faces and longtime fans of our Brand,” said Ricky Richardson, CEO of Eggs Up Grill. “We couldn’t be happier to have Richard’s rich industry experience behind our first restaurant in Mississippi, as we know he is devoted to making our guests smile.”
Harris worked for Captain D’s for 40 years, beginning as a cook, and working his way up to an area supervisor of 12 locations in Atlanta, Ga. Most recently, he was the hometown area partner for a Captain D’s franchise in Meridian, Miss. He met his partners, the Johnson brothers, when they were customers at his restaurant; the two have been business owners in Meridian for the last 60 years, including real estate and car dealerships. Harris spent 18 months researching Eggs Up Grill, watching its growth closely, before making a trip to Madison, Ala. to finally dine at one of the restaurants.
“I knew they had doubled in size, and I knew that I was intrigued by the décor and the concept, but when I finally dined at an Eggs Up Grill, I was hooked,” said Harris. “It’s exactly what I expected – I felt like I was eating breakfast on vacation with the colors and the openness, not to mention – after 40 years in the business as an operator– eliminating the night shift was very attractive to me,” said Harris.
